Abstract
The encapsulation of Mango (Mangifera indica Linn.) cultivar Chok-Anan seed kernel,which were collected as waste from the fruit industry in Thailand, was investigated tocompare the use of methyl gallate as a bioactive substance. Ethanolic extracts wereobtained and characterized by total phenolic content and antioxidant activity, whichwas assessed with 2.2-diphenyl-2-picrylhydrazyl radical. Mango seed kernel (MSK)lyophilized extracts were encapsulated using the water-in-oil-in-water (W1/O/W2)emulsion system before spray drying. The electron microscopy (SEM) was determinedafter formulation of each type of complex, droplet sizing, solubility, the bioactivecompounds microencapsulated yield (BMY) and scanning. The MSK extract showedsignificantly (P<0.05) higher antioxidant capacity than that of α-tocopherol. Overall,the average size in terms of d32 values of W/O/W emulsions was 2.20 +± 0.10 μ μm. Theencapsulated samples showed higher solubility in oil than water compared to MSKextract and methyl gallate. The MSK extract and methyl gallate encapsulation yieldsreached values above 98% and 92%, respectively. In the SEM micrographs ofencapsulated MSK, the extract appeared rather rounded compared to the others. Theresults imply that encapsulation is a promising technique to develop MSK extractsolubility in oil.
